i love greek salads.
i love panera.
i love the greek salad at panera.
so i googled the recipe. and i found this. i made it a couple of weeks ago and we loved it!
{i just smashed a mosquito on my hand. while sitting in my living room. yuck.}
a few nights later i started to make my usual greek salad: cucumbers, tomatoes, red onions, and feta cheese. we were headed to a cook-out & instead of making a balsamic vinaigrette like i usually do, bubba begged me to use the panera recipe.
and i did. and it was wonderful again. so winner-winner. meat-free dinner. {ha.}
Panera's Greek Salad Recipe
1/2 c red wine vinegar
2 t garlic, minced
2 t shallot, minced
2 t fresh oregano, finely chopped
2 t fresh basil, chiffonade
1 t Dijon or whole-grain mustard
salt/pepper to taste
1-1 1/2 c extra-virgin olive oil
Whisk all ingredients except oil together in a mixing bowl. Once combined, slowly pour in EVOO, whisking to form an emulsion.
***i think next time i might combine in a blender to make a smooth dressing. with all the fresh herbs it's a little thick and lumpy.
